Can you say anything about the effects that the human body might have on the wireless scanning that NetSpot performs? In particular, I’m thinking of the case where the human carrying the scanning computer is interposed between the computer and a wireless access point. I’m wondering if there’s a best practice regarding collection of wireless data with the human carrying the laptop in mind.

The best recommendation here would be: take several surveys, use different body positions and different paths. Then compare the results, that’ll give you the answer whether the body position influences the results in your case.
